San Severo is the undisputed capital of Apulian bubbles, the place where the classic method began to establish itself in the South.

Grape varieties:  Bombino bianco and Trebbiano bianco (40%-60% or 85%), Falanghina, Malvasia bianca di Candia (85%) for whites; Montepulciano (70%) and Sangiovese (30% or 85%), Merlot (85%), Nero di Troia (85%) for reds and rosés.


For centuries, everything has revolved around San Severo, which was and still is the commercial hub of an area where agriculture is the mainstay. We are in the Foggia area, where the town and the PDO, which includes the prized grapes of six other municipalities, bear the same name inspired by the church dedicated to San Severino Abate around which the village has developed. Bell towers and underground cellars are the most fascinating ways to visit San Severo, which in recent decades has established itself as the undisputed capital of Apulian bubbles. Lively private enterprise, which has returned from other professions to invest in vines and wine, has developed a production of extraordinary excellence of classic method wines desired throughout the world.   The richness of the vineyards in this area, which is considered the gateway to the Gargano, is expressed in a wide collection of both native and international grape varieties to which the human factor has given connotations of absolute excellence in the glass.

Tasting notes

San Severo PDO Bianco is mainly produced with Bombino bianco at 40%-60% and Trebbiano bianco up to 40%-60%. The wine in the glass has a more or less intense straw colour, a pleasant, fruity and slightly vinous aroma and a dry, fresh and well balanced taste.

Alcohol content: 11%.

 

San Severo PDO Sparkling White has a pale straw colour, a pleasant, fruity aroma and a dry, fresh taste.

Alcohol content: 11%.

 

San Severo PDO Spumante Charmat Method White has a fine, persistent froth, a more or less intense straw colour, a delicate aroma, with a distinctive fruity scent, and a dry, fresh, well balanced taste.

Alcohol content: 11%.

San Severo PDO Bombino bianco, as the name already suggests, requires a greater presence of Bombino bianco grapes, which must be at least 85%.

San Severo PDO Bombino bianco has a more or less intense straw colour, a delicate aroma, with a characteristic fruity scent, a dry, fresh and well balanced taste.

Alcohol content: 10.50%.

San Severo PDO Bombino bianco Sparkling has a more or less intense straw colour, a delicate aroma, with a characteristic fruity scent, a dry, fresh and well balanced taste.

Alcohol content: 11%.

 

 

San Severo PDO Bombino bianco Spumante Charmat Method has a fine, persistent froth, a more or less intense straw yellow colour, a delicate aroma, with a characteristic fruity scent, and a dry, fresh, well balanced taste.

Alcohol content: 11%.

San Severo PDO Falanghina is another variety valued in this DOP, produced from grapes that are at least 85% Falanghina. The wine in the glass has a more or less intense yellow colour, a delicate aroma, with a characteristic fruity scent, a dry, fresh and pleasant taste.

Alcohol content: 11%.

San Severo PDO Malvasia bianca di Candia requires the use of at least 85% of grapes of this variety.

In the glass, San Severo PDO Malvasia bianca di Candia has a more or less intense yellow colour, a delicate aroma, with characteristic scent and aromatic hints, a dry, fresh, pleasant and aromatic taste.

Alcohol content: 11%.

San Severo PDO Trebbiano bianco requires at least 85% of the grapes of the variety indicated in the name. In the glass it has a straw colour, a vinous smell, with a delicate scent, a dry, fresh, well balanced and sapid taste.

Alcohol content: 11%.

San Severo PDO Red is produced with a minimum of 70% Montepulciano and a maximum of 30% Sangiovese, with the same grapes in the same proportion also for San Severo PDO Rosé.

In the glass, San Severo PDO Red has a ruby red colour tending toward garnet with ageing, a vinous aroma, with a pleasing, distinctive bouquet, a dry taste, full-bodied, zesty, well balanced and appropriately tannic.

San Severo PDO Reserve Red has a ruby red colour that acquires garnet red reflections with ageing of at least 18 months, a vinous aroma, with a pleasant, distinctive fragrance, a dry taste, full-bodied, sapid, well balanced and pleasantly tannic.

Alcohol content: 12.50%.

 

San Severo PDO Nouveau Red, which is obtained from carbonic maceration, has a more or less intense ruby red colour, an intense, pleasant and distinctive aroma and a well balanced, distinctive and rounded taste

Alcohol content: 11%.

San Severo PDO Rosé is the result of the vinification of grapes that must be at least 70% Montepulciano and at most 30% Sangiovese (as for San Severo PDO Red).

In the glass, San Severo PDO Rosé has a more or less intense rosé colour, a delicate vinous aroma, characteristic, sometimes fruity, and a dry, well balanced, pleasing taste

San Severo PDO Sparkling Rosé has a more or less intense rosé colour, a delicate vinous, characteristic, sometimes fruity aroma and a dry, well balanced, agreeable taste.

Alcohol content: 11%.

San Severo PDO Merlot, in which this international grape variety must be at least 85%, has a ruby red colour tending towards garnet with ageing, a vinous aroma, with a characteristic fruity scent, a dry taste, full-bodied, sapid, well balanced and appropriately tannic.

Alcohol content: 11.50%.

 

San Severo PDO Merlot Rosé has a more or less intense rosé colour, a vinous aroma, with a characteristic fruity scent, a dry, zesty, well balanced taste.

Alcohol content: 11.50%.

San Severo PDO Uva di Troia or Nero di Troia is produced with at least 85% of grapes from this indigenous variety. In the glass it has a ruby red to garnet colour, a pleasant and characteristic smell, a vinous, dry, well balanced and rightly tannic taste.

Alcohol content: 11.50%.

 

San Severo PDO Uva di Troia or Nero di Troia Rosé has a more or less intense rosé colour, a pleasing, distinctive aroma and a vinous, dry, well balanced taste

Alcohol content: 11,50%.

 

San Severo PDO Uva di Troia or Nero di Troia Reserve has a ruby red to garnet colour, a pleasing, distinctive aroma and a vinous, dry, harmonious, suitably tannic flavour.

San Severo PDO Nero di Troia Reserve wine has a minimum obligatory ageing period of at least 18 months.

Alcohol content: 12.50%.

San Severo PDO Sangiovese refers to the use of at least 85% of Sangiovese grapes. In the glass it has a ruby red colour tending to garnet with ageing, a vinous aroma, with a pleasant characteristic scent, a dry taste, full-bodied, sapid, well balanced and slightly tannic.

Alcohol content: 11.50%.

 

San Severo PDO Sangiovese Rosé has a ruby red colour, sometimes with violet reflections, a vinous aroma, with a distinctive delicate scent, a dry, well balanced, slightly tannic taste
