The first Italian rosé wine was bottled in the city having the name of this prestigious PDO, famous also for its reds.

Characteristic of: the whole territory of Salice Salentino, Veglie, Guagnano and part of Campi Salentina (Lecce); the whole territory of San Pancrazio Salentino and San Donaci, part of Cellino San Marco (Brindisi).
Grape varieties: 70% Chardonnay for white; 80% Negroamaro and then Malvasia Nera di Brindisi and Malvasia Nera di Lecce (no more than 20%) for red and rosé; Pinot Bianco (85%) and the rest Chardonnay or Sauvignon for Spumante Charmat Method, 85% Aleatico and 15% Negroamaro, Malvasia Nera and Primitivo for sweet wines.
The first Italian rosé wine was bottled in the city of Salice Salentino. A record that shows the great value that the wine culture of this area gives to the rosé wine making. It is a rather difficult technique, requiring great skill to ensure that the same red wine grapes produce a delicate glass of rosé, with a very rich fruity and floral bouquet.
Salice Salentino and the municipalities that surround it are also known for the nobility of the red wines produced, exported all over the world.
It should be noted that for all types of Salice Salentino PDO it is allowed to dry the grapes on the plant or on mats or in boxes, even in drying lofts, under conditions of controlled temperature, humidity and ventilation.
The typologies envisaged by the production regulations are:
Salice Salentino PDO White is the expression of at least 70% of Chardonnay grapes. The wine has a more or less intense straw yellow colour, which may have greenish reflections, a delicate and pleasantly fruity aroma when young, a dry or sweetish, fresh and well balanced taste.
Alcohol Content: 11%.
Salice Salentino PDO Spumante Charmat Method White has a fine, persistent froth, a more or less intense straw yellow or more or less intense rosé colour, a delicate, fruity aroma with tasty notes of yeast, a fresh, well balanced taste, ranging from extra brut to extra dry.
Alcohol Content: 11,50%.
Salice Salentino PDO Red is produced with at least 75% of Negroamaro grapes. In the glass it has a more or less intense ruby red colour with possible reflections tending towards garnet red with ageing, a pleasant and intense aroma, a full, dry or medium sweet taste, robust but velvety, warm and well balanced.
Alcohol Content: 12 %.
Salice Salentino PDO Reserve Red needs to be aged for at least two years. In the glass it has a more or less intense ruby red colour, with possible reflections tending towards garnet red with ageing, a pleasant and intense aroma, with hints of ripe red fruit, a full, dry or sweetish taste, robust but velvety, warm and well balanced.
Alcohol Content: 12,50%.
Salice Salentino PDO Rosé, like the red, requires the use of at least 75% Negroamaro. In the glass it has a more or less intense rosé colour, a delicate and pleasantly fruity aroma and a dry or medium sweet, fresh and well balanced taste.
Alcohol Content: 11,50%.
Salice Salentino PDO Spumante Charmat Method Rosè is distinguished by its fine, persistent froth, its more or less intense rosé colour, its delicate, fruity aroma with notes of yeast, and its fresh, well balanced taste, ranging from extra brut to extra dry;
Alcohol Content: 11,50%.
Salice Salentino PDO Negroamaro requires at least 90% of grapes from this variety. In the glass it has a more or less intense ruby red colour with possible reflections tending towards garnet red with ageing, a distinctive, pleasing and intense aroma with hints of ripe red fruit, a full, dry or medium sweet taste, robust but velvety, warm and well balanced.
Alcohol Content: 12%.
Salice Salentino PDO Negroamaro Reserve requires at least two years of aging. In the glass it has a more or less intense ruby red colour with possible reflections tending toward garnet red with ageing, a distinctive, pleasing and intense aroma, a full, dry or medium sweet taste, robust but velvety, warm, well balanced and with spicy notes.
Alcohol Content: 12,50%.
Salice Salentino PDO Negroamaro Rosé (it can also be Spumante Charmat Method), like the Red, is produced from at least 90% of the grapes of the indicated variety. In the glass it has a delicate, fruity aroma with hints of rose and cherry, a dry or medium sweet taste, delicate, fresh and well balanced.
Alcohol Content: 11,50%.
Salice Salentino PDO Chardonnay (it can also be Spumante Charmat Method) comes for at least 85% from grapes of the indicated variety. The wine has a more or less intense straw yellow colour, an intense, distinctive aroma and a dry or medium sweet pleasing, fruity taste.
Alcohol Content: 11%.
Salice Salentino PDO Fiano (it can also be Spumante Charmat Method) is produced with at least 85% of grapes of the indicated variety. The wine has a more or less intense straw yellow color with possible greenish reflections, a delicate and floral aroma, a dry or sweet taste, fresh and balanced.
Alcohol Content: 11%.
Salice Salentino PDO Pinot Bianco (it can also be Spumante Charmat Method) requires at least 85% of the grapes of the indicated variety. The wine has a more or less intense straw yellow colour, a fine and delicate aroma, a dry or medium sweet taste, well balanced and fruity.
Alcohol Content: 11%.
Salice Salentino PDO Aleatico Natural Sweet is produced with at least 85% of Aleatico grapes and then, alone or together, Negroamaro, Malvasia Nera and Primitivo. In the glass, Salice Salentino PDO Aleatico Natural Sweet has a more or less intense garnet red colour with violet reflections, tending to orange with ageing, a delicate characteristic aroma that blends with the perfume that the wine acquires with ageing, a full, moderately sweet and velvety taste. The Reserve requires an aging of at least two years.
Total Alcohol: 13%.
Salice Salentino PDO Aleatico Liqueur-like Sweet has a more or less intense garnet red colour with violet reflections tending towards orange with ageing, a delicate characteristic aroma that blends with the perfume that the wine acquires with ageing, a full, warm, sweet, well balanced and pleasant taste.
The Riserva requires an aging of at least two years.
Total alcohol: 18.50%.
